Ingredients

  • 1 - big Brinjal
  • 1/2 cup - flour
  • 1 - big Onion
  • 1/2 cup - yogurt
  • 1/2 tsp - Turmeric powder
  • 1 tsp - Red Chilli powder
  • 1/2 tsp - salt
  • 1 tbsp - Coriander leaves
  • Dried Mint leaves powder
  • Cooking oil for frying
  • How to Make Curd Brinjal:

    1. Slice the brinjal into 2 cm thick ovals. Smear them with a mixture of salt, turmeric and red chilli powder and leave aside for 10 minutes or so.
    2. Dust the flat sides of the brinjal slices with flour.
    3. Heat oil in a frying pan and shallow fry the brinjal pieces until they turn crisp and golden brown in colour.
    4. Arrange the fried pieces on a serving tray.
    5. Deep fry the chopped onions until golden.
    6. Sprinkle the onions on the brinjal pieces.
    7. Now prepare the yogurt by adding salt and mint powder to it, and then beating it briskly to form a lumpless thick mixture.
    8. Spoon the yogurt over the fried brinjal pieces and garnish them with finely chopped coriander leaves.
    9. Serve with roti.
