Ingredients

  • 200g - beans, chopped into small pieces
  • 200g - carrot, chopped into small pieces
  • 1 - large onion, chopped
  • 1 - large tomato, chopped
  • 5 - Curry leaves
  • 1 tsp - chilli powder
  • 1/2 tsp - coriander powder
  • 1/2 tsp - Turmeric powder
  • 1/2 tsp - cumin powder
  • 1 tsp - Garlic paste
  • 1 tsp - Ginger paste
  • 2 tbsp - oil
  • Salt to taste
  • 2 tbsp - Coconut paste
  • 1 tbsp - chopped Coriander leaves

How to Make Curried Beans And Carrot

  • Heat oil in a suitable pan and add curry leaves and the onions; fry for a few minutes till lightly brown.
  • Add the ginger and garlic paste and stir fry for a few minutes.
  • Add the chopped tomatoes, turmeric powder, chilli powder, cumin powder, coriander powder, and salt.
  • Simmer till the tomatoes turn pulpy and the oil separates from the mixture.
  • Now add the chopped carrot, beans, and 2 cups of water and cook covered on low heat till tender.
  • Mix in the coconut paste and simmer for 2 more minutes.
  • Garnish with chopped coriander leaves.
  • Serve.
