Ingredients

  • 200g - beans, chopped into small pieces
  • 200g - carrot, chopped into small pieces
  • 1 - large onion, chopped
  • 1 - large tomato, chopped
  • 5 - Curry leaves
  • 1 tsp - chilli powder
  • 1/2 tsp - coriander powder
  • 1/2 tsp - Turmeric powder
  • 1/2 tsp - cumin powder
  • 1 tsp - Garlic paste
  • 1 tsp - Ginger paste
  • 2 tbsp - oil
  • Salt to taste
  • 2 tbsp - Coconut paste
  • 1 tbsp - chopped Coriander leaves
  • How to Make Curried Beans And Carrot:

    1. Heat oil in a suitable pan and add curry leaves and the onions; fry for a few minutes till lightly brown.
    2. Add the ginger and garlic paste and stir fry for a few minutes.
    3. Add the chopped tomatoes, turmeric powder, chilli powder, cumin powder, coriander powder, and salt.
    4. Simmer till the tomatoes turn pulpy and the oil separates from the mixture.
    5. Now add the chopped carrot, beans, and 2 cups of water and cook covered on low heat till tender.
    6. Mix in the coconut paste and simmer for 2 more minutes.
    7. Garnish with chopped coriander leaves.
    8. Serve.
