  • 1/2 kg - tender small bitter ground
  • 1 cup - tamarind juice
  • 2 tsp - chilli powder
  • 1 tsp - turmeric powder
  • 1 tsp - ginger and garlic paste
  • A few - curry leaves
  • Salt to taste
  • 2 tbsp - oil
  • 1 tsp - cumin powder
  • 2 tbsp - sugar
  • 2 - onions chopped.

How to Make Curried Bitter Gourd

  • Scrape the bitter gourd and cut them into medium size slices.
  • Soak them in salt water for about 2 hours.
  • Heat oil in pan and fry the onions till light brown.
  • Add the ginger and garlic paste and saute for a few minutes.
  • Add the chilli powder, cumin powder, curry leaves, turmeric powder, and fry for some time.
  • Drain the water from the bitter gourd and add it to the masala. Keep frying for a few minutes.
  • Now add the salt, sugar and tamarind juice and simmer on low heat till the bitter ground is cooked and the gravy is thick.
  • Serve.
