Ingredients

  • 1 medium-sized Cabbage (about 1 kg)
  • 1 Onion
  • 2 cooking apples
  • 50g - Butter or margarine
  • 1-2 level tsp - Curry powder
  • Salt and pepper
  • 150ml - natural yogurt
  • 1/2 level tsp - finely chopped fresh Mint
  • 25g - salted Peanuts
  • 50g - sultanas
  • How to Make Curried cabbage:

    1. Wash and shred cabbage, discarding the tough centre core.
    2. Peel and chop onion and apples.
    3. Melt butter or margarine in a saucepan, add onion, and fry gently until soft.
    4. Add apple and cabbage and stir over a moderate heat for 5 minutes.
    5. Stir in curry powder and seasoning.
    6. Cover and cook gently for 10 minutes, shaking the pan from time to time.
    7. Stir in yoghurt, mint, peanuts, and sultanas.
    8. Reheat gently and serve hot.
    9. For a new way to give the cabbage a lift, if you like really spicy dishes, use a larger amount of curry powder.
