  • 8 oz - pineapple chunks in juice
  • 1 cup - frozen cauliflower
  • 1 cup - broccoli
  • 1 cup - carrots
  • 1/2 cup - water
  • 8 oz - boneless, skinless chicken breast
  • 8 oz - low fat yogurt
  • 2 tbsp - all-purpose flour
  • 3 tsp - curry powder
  • 1/2 tsp - salt
  • 2 tbsp - chopped salted peanuts

How to Make Curried Chicken Pineapple Casserole

  • Drain pineapple, reserving juice, and set aside.
  • In a 2-quart microwave-safe casserole combine frozen vegetables and water. Cover and cook on HIGH for 4 to 6 mins or till vegetables are nearly thawed, stirring once. Drain.
  • Stir in chicken and reserved pineapple juice. Cook covered on HIGH for 5 to 8 mins or until chicken is no longer pink. Stir once.
  • Set aside while mixing sauce ingredients. For sauce, stir together yogurt, flour, curry powder and salt.
  • Add to chicken and vegetables and stir to mix well. Cook uncovered on HIGH for 4 to 7 mins or until sauce is thickened and bubbly, stirring every other minute.
  • Stir in pineapple chunks. Cook uncovered on HIGH for 30 seconds or until heated through.
  • Let it rest for 5 mins.
  • Serve garnished with peanuts.
