  • 8 oz - Pineapple chunks in juice
  • 1 cup - frozen Cauliflower
  • 1 cup - Broccoli
  • 1 cup - Carrots
  • 1/2 cup - water
  • 8 oz - boneless, skinless Chicken breast
  • 8 oz - low fat yogurt
  • 2 tbsp - all-purpose flour
  • 3 tsp - curry powder
  • 1/2 tsp - salt
  • 2 tbsp - chopped salted Peanuts
  • How to Make Curried Chicken Pineapple Casserole:

    1. Drain pineapple, reserving juice, and set aside.
    2. In a 2-quart microwave-safe casserole combine frozen vegetables and water. Cover and cook on HIGH for 4 to 6 mins or till vegetables are nearly thawed, stirring once. Drain.
    3. Stir in chicken and reserved pineapple juice. Cook covered on HIGH for 5 to 8 mins or until chicken is no longer pink. Stir once.
    4. Set aside while mixing sauce ingredients. For sauce, stir together yogurt, flour, curry powder and salt.
    5. Add to chicken and vegetables and stir to mix well. Cook uncovered on HIGH for 4 to 7 mins or until sauce is thickened and bubbly, stirring every other minute.
    6. Stir in pineapple chunks. Cook uncovered on HIGH for 30 seconds or until heated through.
    7. Let it rest for 5 mins.
    8. Serve garnished with peanuts.
