  • 1 Large Red Bell Pepper
  • 1 Medium Onion (diced)
  • 1 tbsp- Butter
  • 1 cup- Water or Vegetable Stock
  • 1/2 cup- Sour Cream or Heavy Whipping Cream
  • 1 tsp- Curry Powder (Madras Style)

How to Make Curried Red Pepper Soup

  • Saute onion and pepper in butter over medium heat.
  • When peppers are soft, add the curry powder and stock and cover
  • Once the peppers are soft, add cream, and puree.
  • Return to low heat and simmer uncovered until a rich soupy consistancy is attained.
  • Add freshly ground black pepper to taste and chopped coriander to garnish. Serve hot!
