  • Chicken - 1 kg
  • Maida - 1/2 cup
  • Curry powder - 1/2 cup
  • Salt to taste
  • Oil to fry
  • Garlic - 1 tbsp, minced
  • Onions - 1 cup, sliced
  • Tomato ketchup - 1/2 cup
  • How to Make Curry Fried Chicken:

    1. Joint the chicken
    2. Cook the back, wing and neck pieces with 1 cup of water and salt
    3. Strain and keep the stock
    4. Mix the maida with 1/2 the curry powder and salt
    5. Roll the remaining chicken pieces in the maida mix and deep fry in hot oil until golden brown
    6. Heat 3 tbsp oil and saute the garlic until brown
    7. Now add the onion and fry well
    8. Add the remaining curry powder, salt and about 1 cup of stock
    9. Cover and simmer till the chicken is cooked
    10. Add the tomato ketchup and simmer for 2 more mins
    11. Serve hot with fried rice or noodles.
