Ingredients

  • hard-boiled eggs - 6
  • Onion - 1 cup, sliced
  • Curry leaves - 1/3 cup, shredded
  • oil - 4 tbsp
  • Garlic - 4 flakes, peeled and lightly crushed
  • chili powder - 2 tsp
  • Turmeric powder - ½ tsp
  • coriander powder - 2 tsp
  • thick Tamarind juice - 2 tbsp
  • salt to taste

How to Make Curry Leaf Egg Roast

  • Shell the eggs and grate them coarsely.
  • Heat oil in a fry pan. Add the garlic.
  • When the garlic turns dark brown, add onion and fry till brown.
  • Add all the powders and curry leaves.
  • Fry for few seconds.
  • Add the tamarind juice and 2 tbsp of water.
  • Simmer for 2 minutes.
  • Add eggs and salt.
  • Mix well and keep covered on a low flame for 2-3 minutes.
  • Serve hot with chapathis or steamed rice and rasam.
