Ingredients

  • hard-boiled eggs - 6
  • Onion - 1 cup, sliced
  • Curry leaves - 1/3 cup, shredded
  • oil - 4 tbsp
  • Garlic - 4 flakes, peeled and lightly crushed
  • chili powder - 2 tsp
  • Turmeric powder - ½ tsp
  • coriander powder - 2 tsp
  • thick Tamarind juice - 2 tbsp
  • salt to taste
  • How to Make Curry Leaf Egg Roast:

    1. Shell the eggs and grate them coarsely.
    2. Heat oil in a fry pan. Add the garlic.
    3. When the garlic turns dark brown, add onion and fry till brown.
    4. Add all the powders and curry leaves.
    5. Fry for few seconds.
    6. Add the tamarind juice and 2 tbsp of water.
    7. Simmer for 2 minutes.
    8. Add eggs and salt.
    9. Mix well and keep covered on a low flame for 2-3 minutes.
    10. Serve hot with chapathis or steamed rice and rasam.
