  • 4 (100 gms each) - Fish filets
  • 10-12 - spicy Thai red chillies 
  • 30 - Garlic cloves, finely chopped 
  • 1 cup - Curry leaves, finely chopped
  • 1 tsp - Salt
  • 1 tbsp - Oil
  • Juice of 1 lime 
  • How to Make Curry Leaf Fish:

    1. Wash the fish and pat dry.
    2. Combine the green chillies, garlic, curry leaves and salt in a bowl.
    3. Divide in half and marinate the fish for 10 minutes in one half of the mixture.
    4. Put the oil in a pan on medium heat. When hot, add the other half of the curry leaf mix and saute for 2-3 minutes, till the garlic is golden.
    5. Add the fish and fry on both sides, till cooked through and firm.
    6. Alternatively, you can bake the fish. 
    7. Mix the fish into the fried herbs and arrange the pieces in a baking dish, cover with foil and bake in an oven preheated to 180 C for 20 minutes, till the fish is cooked through and flaky.
    8. Uncover and bake for a further 5-8 minutes to crisp it up.
    9. Squeeze in the lime juice and stir gently.
    10. Serve with steamed white rice!
