Ingredients

  • 4 - eggs
  • 1 cup - thick coconut milk
  • 2 - onions, chopped
  • 2 - green chillies, chopped
  • 1 - large onion, sliced
  • 1 - large tomato, chopped
  • Oil - 3 tbsp
  • Salt to taste
  • Grind to a paste:
  • 1 tbsp - chopped fresh coriander leaves
  • 4 cloves - garlic
  • 1 tsp - coriander seed
  • 3 - red chillies
  • 1.5 tsp - cumin seed
  • 1.5 inch piece - ginger

How to Make Curry with Omelet

  • Beat the eggs well together and add the chopped onions and green chillies.
  • Heat the oil in a frying pan and pour in the egg mixture.
  • Tilt the pan around and let the mixture spread evenly.
  • When brown on one side, turn and brown the other side. Keep warm.
  • Heat some more oil in another pan and fry the sliced onions until golden brown.
  • Add the ground paste and fry for a few minutes, then add the tomatoes.
  • Fry well and allow to simmer for 5 mins
  • Add the coconut milk and salt to taste.
  • Cut the omlette into 1 inch squares and drop into the curry.
  • Simmer for a few minutes.
  • Sprinkle with fresh coriander leaves and serve immediately.
