How to Make Dacres's Lane Stew

  • Heat oil in a pan. Add garlic and sauté.
  • Now add the whole spices and sauté till fragrant.
  • Toss in the vegetables and let it cook for about seven minutes. Turn off the heat.
  • In another pan, add the sliced onion with a pinch of salt and fry for five minutes.
  • Add the chicken pieces, let it sweat for some more minutes, check for the seasoning.
  • To this add the sautéed potatoes, carrots, papaya and chopped tomato. Mix well.
  • Add 1 and half cups of stock and salt. Mix well and cook until the chicken is tender.
  • Finish it with the butter before turning off the heat. Serve hot along with pound bread.
