  • 300 gms - Small Brinjals
  • 1/2 cup - Mustard oil
  • 3 tsp - Mustard paste
  • 1.5 cups - Blended dahi
  • 1/2 tsp - Haldi powder
  • 1 tsp - Sugar
  • Salt to taste

How to Make Dahi Stuffed Brinjals

  • Slit the brinjals without cutting them.
  • Heat oil and fry the brinjals till half tender.
  • Mix the remaining ingredients and cover with a lid and cook on low flame till the brinjals are tender and the mustard pste and the dahi is absorbed into the brinjals leaving a little gravy.
  • Mix in the sugar and stir till it melts.
  • Serve with hot rotis or rice
