A flavourful curry that can be made withiin a few minutes - 'Dal in Coconut Milk'. It is a comfort food during the monsoons that can be enjoyed with your steamed rice or paratha. 

Moong Dal is a protein-rich lentil and is great for those who watch their weight. This healthy dal cooked in thick coconut milk results in a tasty, thick curry. The addition of varied vegetables adds to the goodness of the dish.

Ingredients

  • 1 cup moong dal
  • ½ tsp. each of Garam Masala and coarsely pounded peppercorns
  • ¼ tsp. Turmeric powder
  • Thick Milk from half Coconut
  • 100 gms. Tomatoes
  • 250 gms. ladies fingers (optional)
  • 250 gms. Cauliflower florets (optional)
  • How to Make Dal in Coconut Milk:

    1. Cook dal in water to which salt and turmeric powder has been added. When soft, mash and pass through a sieve.
    2. Put in peeled and pureed tomatoes, coconut milk and peppercorns.
    3. Mix well, add the vegetables and cook till they are soft. Sprinkle on top with garam masala and pepper powder.
