Ingredients

  • 1 cup - moong dal
  • 4 cup - stock (chicken or vegetable)
  • 1 - onion, chopped
  • 1 - tomato, chopped
  • 1/2 cup - green bean, chopped
  • 1/2 cup - cauliflower, chopped
  • 1/2 cup - frozen carrots and peas
  • 1 tsp - ginger,minced
  • 1 tsp - garlic, minced
  • Green chilli - to taste
  • 1/2 tsp - mustard seed
  • 1 sprig - curry leaves
  • Lime juice to taste
  • Coriander for garnishing, finely chopped
  • Green chilli for garnishing, finely chopped
  • Fried onions - for garnishing
  • Salt to taste
  • 1 tbsp - oil

How to Make Dal Soup with mixed veggies

  • Wash and drain the moong dal
  • In a pressure cooker, add moong dal, broth (3 cups), onions, carrots and peas, ginger, garlic, tomatoes, cauliflower, green beans, green chilli and salt.
  • Mix well and cook for 2 whistles
  • Turn the stove off and let the pressure subside
  • Open and mix well.
  • If needed, transfer the dal to a bigger pot. Add the remaining stock.
  • Blend well using a hand-blender or a blender.
  • Add lime/lemon juice to taste.
  • For the seasoning, take a pan, add the oil and heat.
  • Add in the mustard seeds and allow them to splutter.
  • Add curry leaves to the seasoning. Then mix it all into the dal and allow it to come to another boil.
  • Pour into soup bowls and serve.
