  • 300 gm dark chocolate
  • 100 gm crystallized Ginger
  • 100 gm Raisins

How to Make Dark Ginger & Raisin Logs

  • Melt the dark chocolate in a double boiler
  • Temper it and put it in a bowl
  • Add 100 gms crystallised ginger, 100 gms raisins to the melted chocolate
  • Mix it gently with a spatula
  • Pour this mixture into rectangular tray
  • Smooth it on the top to give it a finished look
  • Put into a refrigerator for approximately 25 minutes
  • Remove and slice into long thin rectangles
