  • 300 gm dark chocolate
  • 100 gm crystallized Ginger
  • 100 gm Raisins
  • How to Make Dark Ginger & Raisin Logs:

    1. Melt the dark chocolate in a double boiler
    2. Temper it and put it in a bowl
    3. Add 100 gms crystallised ginger, 100 gms raisins to the melted chocolate
    4. Mix it gently with a spatula
    5. Pour this mixture into rectangular tray
    6. Smooth it on the top to give it a finished look
    7. Put into a refrigerator for approximately 25 minutes
    8. Remove and slice into long thin rectangles
