Ingredients

  • 100 gm - fresh dates, pitted and chopped
  • 90 gm - dried figs, chopped
  • 75 gm - butter, melted
  • 300 ml - water
  • 1 tsp - soda bicarb
  • 200 gm - raw Sugar
  • 2 eggs, lightly beaten
  • 2 tbsp - chopped Walnuts
  • 1/2 tsp - vanilla essence
  • 190 gm - self rising flour
  • For the sauce:
  • 60 gm - Butter
  • 250 gm - soft Brown sugar
  • 1 cup - Cream
  • 1 tsp - vanilla essence
  • 2 tbsp - grated Lemon rind

How to Make Date and fig pudding

  • Grease a microwave-safe dish with softened butter.
  • Place the dates, figs and water in a large bowl and cook on High for 6 mins.
  • Mash the dates and figs with a fork.
  • Add and stir the soda bicarb until it foams.
  • Keep aside to cool. Add butter and mix.
  • Add vanilla essence and sugar, mix well.
  • Gradually add the eggs, beating well after each addition.
  • Add the sifted flour and walnuts.
  • Mix gently. Do not overbeat, just mix.
  • Pour the mixture into the greased dish and cook on medium high for 6 mins.
  • Leave to stand for 4 mins. before serving.
  • Turn the dish upside down to remove pudding.
  • Serve immediately with hot sauce.
  • For sauce:
  • Combine the cream, butter, sugar, vanilla essence and lemon rind in a microwave safe bowl and cook on High for 5 mins. and 30 seconds, stirring well after each minute.
