Ingredients

  • 500 g - long grain Rice
  • 1 cup - lentils
  • 250 g - Butter
  • 1 cup - warm water
  • 250 g - fresh dates, stoned
  • 125 g - dried apricots, chopped
  • 1/2 cup - blanched almonds, chopped
  • 1/2 cup - Raisins
  • 1 - small onion, finely chopped
  • How to Make Date and Lentil Pulao:

    1. Boil the rice until almost cooked.
    2. Cook lentils with water for 20 mins until soft
    3. Melt half the butter in water over heat
    4. Saute onion in remaining butter until soft and add dates, apricots, almonds and raisins
    5. Pour 1/2 of the butter, water into casserole, then add in layers 1/3 of the rice, 1/2 of the fruit mixture, 1/2 of the lentils, 1/3 of the rice, remaining fruit mixture, remaining lentils and remaining rice and finally pour the remaining butter water.
    6. Cover with cloth, then with lid and simmer over low heat for 30-40 mins
