Ingredients

  • 500 g - long grain Rice
  • 1 cup - lentils
  • 250 g - Butter
  • 1 cup - warm water
  • 250 g - fresh dates, stoned
  • 125 g - dried apricots, chopped
  • 1/2 cup - blanched almonds, chopped
  • 1/2 cup - Raisins
  • 1 - small onion, finely chopped

How to Make Date and Lentil Pulao

  • Boil the rice until almost cooked.
  • Cook lentils with water for 20 mins until soft
  • Melt half the butter in water over heat
  • Saute onion in remaining butter until soft and add dates, apricots, almonds and raisins
  • Pour 1/2 of the butter, water into casserole, then add in layers 1/3 of the rice, 1/2 of the fruit mixture, 1/2 of the lentils, 1/3 of the rice, remaining fruit mixture, remaining lentils and remaining rice and finally pour the remaining butter water.
  • Cover with cloth, then with lid and simmer over low heat for 30-40 mins
