Ingredients

  • For outer layer:
  • 1.5 cups - plain flour
  • 3 tbsp - oil
  • Cold water - to knead the dough
  • Salt - to taste
  • For filling:
  • 1 cup - yellow moong dal, washed and soaked for 1 hour
  • 1 tsp - Garam Masala
  • 1 tsp - Red Chilli powder
  • 1/2 tsp - coriander seeds, crushed coarsely
  • 1/2 tsp - Mustard Seeds
  • 1 tbsp - sesame seeds
  • 7 to 8 - curry leaves, crushed
  • 1 tbsp - coriander leaves, finely chopped
  • Salt - to taste
  • 2 to 3 pinches - Asafoetida
  • 1 tbsp - oil
  • 1 tbsp - plain flour, for patching
  • Oil - for frying
  • How to Make Deep Fried Dal Dumplings:

    1. For outer layer:
    2. Mix flour, salt and oil.
    3. Add water and knead into a soft pliable dough.
    4. Keep aside for 30 minutes.
    5. For filling:
    6. Boil dal in minimum water till soft but not mushy.
    7. Drain out the excess water and cool a little.
    8. Heat oil in a heavy pan. Add all the seeds for tempering and splutter.
    9. Add asafoetida.
    10. Mix all the other ingredients together.
    11. Mash the dal enough to make the mixture hold well.
    12. Remove from fire, cool.
    13. Shape into balls with greased palms. Keep aside.
    14. To make the dumpling:
    15. Make a paste with water and flour for patching. Keep aside.
    16. Take a ping pong ball sized portion of dough.
    17. Roll into a round of 4-inch diameter.
    18. Place one ball of filling in the centre.
    19. Wrap the dough to cover the filling entirely.
    20. Press the ball with palm, to give it the shape of a dumpling.
    21. Deep fry in hot oil, on low flame.
    22. Fry till golden and crisp.
    23. Drain and serve hot with green and tamarind chutneys.
