  • 500 g - snapper or sea bass
  • 8 Cloves - garlic, chopped finely
  • 10 - whole sprigs coriander, chopped finely
  • 1 tsp - Turmeric powder
  • 2 tsp - ground fresh pepper (or to taste)
  • 1 tsp - salt (or to taste)
  • 1 tsp - soya sauce
  • 5 - fresh or dried kaffir Lime leaves
  • 2 cups - soy or vegetable oil
  • How to Make Deep Fried Fish:

    1. Place the whole fish or fish pieces in a bowl with the soy sauce, salt, pepper, garlic, turmeric and coriander. Mix well.
    2. Cover and marinate in the refrigerator for 2-4 hours.
    3. Heat the oil in a large pan or a wok.
    4. Add the kaffir lime leaves and deep fry till crisp. Remove from the pan and drain.
    5. Put the fish in the oil over medium high heat and deep fry until golden brown.
    6. Remove the fish, drain and garnish with the fried kaffir lime leaves.
