Ingredients

  • 500 g - snapper or sea bass
  • 8 Cloves - garlic, chopped finely
  • 10 - whole sprigs coriander, chopped finely
  • 1 tsp - Turmeric powder
  • 2 tsp - ground fresh pepper (or to taste)
  • 1 tsp - salt (or to taste)
  • 1 tsp - soya sauce
  • 5 - fresh or dried kaffir Lime leaves
  • 2 cups - soy or vegetable oil

How to Make Deep Fried Fish

  • Place the whole fish or fish pieces in a bowl with the soy sauce, salt, pepper, garlic, turmeric and coriander. Mix well.
  • Cover and marinate in the refrigerator for 2-4 hours.
  • Heat the oil in a large pan or a wok.
  • Add the kaffir lime leaves and deep fry till crisp. Remove from the pan and drain.
  • Put the fish in the oil over medium high heat and deep fry until golden brown.
  • Remove the fish, drain and garnish with the fried kaffir lime leaves.
