Ingredients

  • 2 cups - basmati or any long grain Rice
  • 1/2 cup - Coconut Milk
  • 2.5 cups - water
  • 1 cup - Carrot grated
  • 4 - tomatoes, small
  • 1/2 tsp - Ginger chopped fine
  • 4 - green chillies, chopped lengthwise
  • 1/2 cup - fresh or frozen Green peas
  • 4 tsp - oil
  • 1 tsp - Ghee
  • 1 tsp - Cumin seeds
  • 1 tsp - chilli powder
  • Salt - to taste
  • Nuts - chopped (optional)
  • How to Make Delicious Pulaav:

    1. Wash the rice, add the coconut milk and water, and cook in a pressure cooker.
    2. In a thick bottomed frying pan, heat ghee and oil.
    3. Add cumin seeds and let them brown.
    4. Then add ginger and green chillies and fry a bit.
    5. Add grated carrots, and green peas and sautee well.
    6. Add diced tomatoes and fry well.
    7. After they have mixed well, add chilli powder, and salt and sautee a bit more.
    8. Reduce heat and add the cooked rice. Mix well. Adjust seasoning.
    9. Fry the chopped nuts in a tsp of ghee, and add to the pulaav.
    10. Serve hot with raita.
