  • 2 cups - basmati or any long grain rice
  • 1/2 cup - coconut milk
  • 2.5 cups - water
  • 1 cup - carrot grated
  • 4 - tomatoes, small
  • 1/2 tsp - ginger chopped fine
  • 4 - green chillies, chopped lengthwise
  • 1/2 cup - fresh or frozen green peas
  • 4 tsp - oil
  • 1 tsp - ghee
  • 1 tsp - cumin seeds
  • 1 tsp - chilli powder
  • Salt - to taste
  • Nuts - chopped (optional)

How to Make Delicious Pulaav

  • Wash the rice, add the coconut milk and water, and cook in a pressure cooker.
  • In a thick bottomed frying pan, heat ghee and oil.
  • Add cumin seeds and let them brown.
  • Then add ginger and green chillies and fry a bit.
  • Add grated carrots, and green peas and sautee well.
  • Add diced tomatoes and fry well.
  • After they have mixed well, add chilli powder, and salt and sautee a bit more.
  • Reduce heat and add the cooked rice. Mix well. Adjust seasoning.
  • Fry the chopped nuts in a tsp of ghee, and add to the pulaav.
  • Serve hot with raita.
