Ingredients

  • 4 cups - mixed vegetables (Carrots, Potato, Cauliflower, Beans and Peas)
  • Salt to taste
  • 1 tbsp - Garam Masala powder
  • 3 tbsp - Ghee or oil
  • A pinch of Sugar
  • Masala powder (fry and powder):
  • 1 tsp aniseeds
  • 2 Cardamoms
  • 1 - Cinnamon
  • 1 - Bay Leaf
  • 10 - Cashewnuts
  • To grind together:
  • 5 flakes Garlic
  • 8 Green chillies (fry both with little oil)
  • 5 tbsp - Coconut scrapings
  • 1 inch - Ginger
  • 1 big Onion
  • 1 bunch - Coriander leaves
  • For garnish -
  • Some Coriander leaves
  • A dash - Lime juice
  • How to Make Delightful Vegetable Kurma:

    1. Heat some oil in a pressure cooker. Fry the vegetables in ghee.
    2. Add the ground masala with enough water, salt, garam masala and sugar.
    3. Cook for 7 mins.
    4. Sprinkle over the masala powder, mix well.
    5. Garnish with coriander leaves and lime juice if desired. Serve hot.
