  • 1 tbsp gram flour (besan)
  • 1 tbsp Wheat flour
  • 1 tbsp Bajra flour
  • 1 tbsp jowar flour
  • 1/2 tbsp Rice flour
  • 5-6 Green chillies (finely chopped)
  • 10-12 Garlic flakes (chopped evenly)
  • 2 tsp Jeera whole
  • 1/2 tsp Asafoetida
  • 1/2 tsp Haldi (or just enough to give colour to the flour mixture)
  • coriander (finely cut)

  • salt to taste

How to Make Dhirde

  • Put the five flours in a bowl.
  • Add garlic, jeera, haldi, asafoetida, coriander and green chillies.
  • Add salt to taste.
  • Add water to the mixture to prepare a thin batter.
  • Add 1 tbsp of oil to the mixture and keep aside for 15-30 minutes.
  • Heat a fry pan and add a tsp of oil.
  • When the pan is hot, put some batter randomly (not the way we make dosas).
  • With the flame high and cover the batter.
  • When the batter starts leaving the sides of the fry pan, drop some oil around it.
  • Turn and cook the other side for a few minutes.
  • Serve hot with tomato ketchup.
