Ingredients

  • 1 cup - grated doodhi (bottle gourd)
  • 2 cups - fresh curd
  • 1/2 cup - milk
  • 1 tsp - cumin powder
  • 3/4 tsp - red chilli powder
  • salt to taste
  • 1 tsp - ground sugar
  • 1/2 tsp each - cumin and mustard seeds
  • 1/2 tbsp - coriander, chopped finely

How to Make Doodhi Raita

  • Boil grated doodhi in a little water until soft. Drain and keep aside to cool.
  • Coarsely crush the seeds together with stone or pestle.
  • Beat the curd and milk together until smooth.
  • Add all ingredients, including the doodhi.
  • Mix well and chill for an hour before serving.
