How to Make

  • Cut the onions into thin strips.
  • Heat a pan and add 4 tbsp of oil. Add the red chillies. Let them darken. Then add mustard seeds and very little jeera seeds and curry leaves.
  • Add the onions and fry on medium flame until transparent.
  • Add the drumsticks and fry for 2 to 3 minutes.
  • Add the brinjal and fry for 2 minutes on low flame.
  • Add the potatoes and fry for another 3 minutes.
  • Once the potatoes are slightly cooked, add turmeric powder, chilli powder, salt, jeera powder and the pounded garlic.
  • Save 1 tbsp of grated coconut and add the rest into the vegetables.
  • Mix well and cook for a minute or two.
  • Add very little water, close and simmer for some time. Stir occasionally.
  • Add the remaining coconut. Mix well and keep on medium flame for a minute.
