1 - drumstick
1 - potato
1 - brinjal
1 cup - finely grated coconut
2 - onions
5 to 6 pods - garlic (pounded)
3 to 4 - red chillies
1/2 tsp - turmeric powder
1 pinch - jeera powder
a few curry leaves
some mustard and jeera seeds
salt to taste
Oil as required
How to Make Drumstick-Potato-Brinjal Gravy
Cut the onions into thin strips.
Heat a pan and add 4 tbsp of oil. Add the red chillies. Let them darken. Then add mustard seeds and very little jeera seeds and curry leaves.
Add the onions and fry on medium flame until transparent.
Add the drumsticks and fry for 2 to 3 minutes.
Add the brinjal and fry for 2 minutes on low flame.
Add the potatoes and fry for another 3 minutes.
Once the potatoes are slightly cooked, add turmeric powder, chilli powder, salt, jeera powder and the pounded garlic.
Save 1 tbsp of grated coconut and add the rest into the vegetables.
Mix well and cook for a minute or two.
Add very little water, close and simmer for some time. Stir occasionally.
Add the remaining coconut. Mix well and keep on medium flame for a minute.
