  • 1 - whole duck
  • Salt to taste
  • 3 tsp - pepper powder
  • 3 tbsp - oil.

How to Make Duck Roast

  • Marinate the duck with the salt and pepper for about 1/2 an hour.
  • Heat oil or ghee in a thick bottomed pan or pressure cooker and add the whole duck.
  • Turn from side and fry for about for about 5 minutes.
  • Add 2 cups of water.
  • Cover the vessel with a tight lid and simmer over low heat turning the duck occasionally till it is cooked and all the water is absorbed.
  • Continue to cook till the duck is roasted to a lovely golden brown.
  • Serve with roasted potatoes and boiled veggies.
