  • 1 - 3-4 pound fryer, cut into serving pieces
  • 6 - potatoes, peeled and quartered
  • 1 c - crushed Tomatoes
  • 2 tbsp - Parsley
  • 1 tsp - Basil
  • 2 - Cloves garlic, minced
  • salt and pepper to taste
  • 1/4 c - grated parmesan cheese
  • 3 tbsp - vegetable oil
  • How to Make Easy Baked Chicken and Potatoes for Easter:

    1. Wash chicken and wipe dry with paper towelling.
    2. Put enough oil in a large roasting pan to cover bottom of the pan. Place chicken in pan and place potatoes between the chicken pieces.
    3. Sprinkle tomatoes, parsley, basil, garlic, salt and pepper over the chicken and potatoes.
    4. Lastly, sprinkle with the grated cheese and the oil.
    5. Bake in 375 degree Fahrenheit oven for 1 hour and 15 minutes, or until chicken is done.
