Ingredients

  • 4 medium potatoes
  • 1 large onion
  • 2 pods garlic
  • A small piece of ginger
  • 3 green chillies
  • Oil as needed
  • Some mustard seeds
  • Curry leaves - a few
  • 1 red chilli, dry
  • 3 tomatoes
  • 1 tsp chilli powder
  • 2 tsp - coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1/2 tsp - turmeric powder
  • Salt to taste
  • A pinch of sugar

How to Make Easy Ginger-Garlic Potato Curry

  • Boil potatoes till done and mash them roughly. Do not make it too smooth.
  • Heat oil in a pan and fry mustard, red chilli, and curry leaves.
  • Now add sliced onion, chopped garlic, and ginger.
  • When golden, add tomatoes and chillies; fry till pulpy.
  • Add all the masala powders and the potatoes.
  • Fry for a couple of minutes and then add salt and enough water to cover the lot.
  • Bring to a boil and allow it to simmer till thick.
  • Add sugar to taste.
  • Lemon juice is optional.
  • This curry can be made in no time and goes well with chapatis and rice.
