  • Mushroom – 500 grams
  • Red Onion – 1 medium
  • Green chillies – 3 nos (optional)
  • Salt – to taste
  • eggs – 2 nos
  • Curry leaves – 1 sprig or Coriander leaves – ¼ bunch
  • Desiccated Coconut – ½ cup
  • Chilli Oil – 1 tsp
  • How to Make Easy Mushroom Thoran (Stir-Fry) with Eggs and Coconut:

    1. Finely slice onion and mushrooms, store separately.
    2. Wash and dry leaves.
    3. Slit green chillies (de-seed if so desired)
    4. Add salt to mushroom and cook on medium heat till all water escapes about 10 minutes (adjust accordingly, as it could vary with mushroom types), end result should be dry mushrooms.
    5. In a separate non-stick pan, heat oil.
    6. Add onion, curry leaves, green chillies and prepare as you would do with scrambled eggs.
    7. Add the dried mushrooms, coconut, check seasoning and stir for about 2-3 minutes. It is now ready to be served.
    8. Sprinkle chopped coriander leaves, if you are using it.
    9. If you have access to fresh coconut it will taste better, else unsweetened desiccated coconut works fine. Even without coconut, it tastes simply great.
