Ingredients

  • 3 - Potatoes (cut in cubes).
  • 1 - Onion (diced).
  • 1 inch piece - Ginger (julienned).
  • 3 to 4 - chillies.
  • 1 stem - curry leaves.
  • 1 cup - thick Coconut milk.
  • 2 cups - thin Coconut Milk (just dilute it with water).
  • 1 tsp - oil.
  • salt.

How to Make Easy Potato stew

  • In a pressure cooker, put 1 tsp of oil and add onions, chillies, ginger and curry leaves and fry on a low heat until the onions get transparent.
  • Now add the potatoes and 2 cups of thin coconut milk to it.
  • Add salt to taste and pressure cook it for 2 whistles.
  • After the steam escapes from the cooker, transfer the stew to a serving bowl and mash some of the potatoes to make the gravy thick.
  • Finally add thick coconut milk.
  • Don't heat it once the thick coconut milk is added.
