Ingredients

  • 1 bunch - Spinach
  • 1 bunch - Coriander leaves
  • Green chillies (varies upon the taste and spice that one desires)
  • 1 - Onion (finely chopped)
  • 2 - Carrot (Grated)
  • 1 cup - Peas (Either fresh peas soaked/boiled or frozen peas will do)
  • 3 cups - Basmati rice
  • Salt (Varies upon the quantity and taste)

How to Make Easy Spinach rice

  • Cook the basmati rice and cool it (put a tbsp of oil while rice is cooking to avoid the rice from sticking to each other and also to avoid sticking to the bottom of the rice cooker).
  • While you are cooling the rice, add a tsp of ghee to it.
  • Cook the spinach with very little water.
  • Grind the coriander leaves and green chillies (adding very little water).
  • Heat oil in a pan and fry the chopped onions till they turn brown.
  • Pour the coriander/green chillies paste along with green peas into the pan. Boil it until the raw smell of the green chillies and coriander leaves disappear.
  • Grind the cooked spinach into a fine paste and add it to the boiling coriander/green chilli paste along with the desired amount of salt.
  • Add the grated carrot and let it boil for few minutes.
  • Turn off the stove and mix it with the cooled rice.
  • The remaining paste can be stored in the fridge and can be used later. This rice goes well with onion raitha.
