Ingredients

  • 10 -baby potatoes, about 4 cm in diameter
  • For the filling:
  • 6 tsp - corn, boiled and crushed
  • 2 tsp -thick Curd or Cream
  • 1 tsp -coriander leaves, chopped
  • 2- Mint leaves, chopped
  • Salt
  • Pepper
  • For the red sauce:
  • 1 tbsp -butter
  • 1/2 cup- Tomato puree
  • Salt
  • Pepper
  • Sugar
  • 1 tsp -corn flour
  • 1 tsp -red chilli sauce
  • 1 tsp -tomato ketchup
  • For the topping
  • 5 tsp -grated cheese
  • few small Mint leaves
  • How to Make Easy Stuffed Baby potatoes:

    1. Thoroughly wash the baby potatoes and scoop out the centres with a knife, large enough to hold at least one tsp of the filling.
    2. Do not peel the potatoes.
    3. Cover the potatoes and cook in microwave on high for 4 mins.
    4. Stir them once in-between for even cooking.
    5. Let it stand for 10 mins.
    6. Mix all the ingredients for the filling and stuff the potatoes with it.
    7. Arrange them on a greased baking dish.
    8. To prepare the red sauce, add all the ingredients in a small casserole and cook in microwave on high for 4 mins.
    9. Stir in-between.
    10. Add a little sauce on each of the baby potatoes.
    11. Sprinkle cheese and arrange tiny mint leaves over them. Microwave on high for 2 mins.
