Ingredients

  • 15 oz. can - kidney beans
  • 1 cup - salsa
  • 1 8 oz. package - grated Mild Cheddar Cheese
  • 1/2 - onion, chopped finely
  • 1/2 - green bell pepper, chopped finely
  • 5 or 6 - Lettuce leaves cut into small pieces
  • 1 - Tomato chopped
  • 4 or 5 - taco shells - crumbled (can substitute Corn tortilla chips here also)
  • How to Make Easy Taco Salad:

    1. Drain and wash kidney beans. Mash them with a spatula to make a bean paste.
    2. To the bean paste add salsa to create a pinkish looking mixture. Place half of the bean mixture on a microwave proof serving plate.
    3. Sprinkle half of the onion, peppers, and cheese.
    4. Microwave on high for 3 minutes or until the cheese melts.
    5. Garnish with lettuce, tomatoes, and the crushed taco shells (or tortilla chips). Repeat the same process in a second plate.
