Ingredients

  • 1/4 kg - cauliflower (cut into big flowerets)
  • 3 - capsicums, (cut into 1/8ths)
  • 2 - potatoes (cut into small cubes)
  • 1 - onion (chopped finely)
  • 1 tbsp - tur dal
  • 2 tbsp - grated coconut
  • 1/2 inch - ginger piece
  • 4 -green chillies
  • 1 tbsp -oil
  • coriander leaves, finely chopped
  • salt to taste

How to Make Easy Vegetable Curry

  • Fry the onions in oil till they change colour.
  • Boil all the chopped vegetables and the fried onions in 2 cups of water.
  • When the vegetables are almost done, add salt.
  • Grind tur dal, coconut, ginger, and green chillies with a little water and add to the boiled vegetables.
  • Cook on low flame for 7 minutes, stirring from time to time.
  • Garnish with chopped coriander leaves. Serve hot with chapatis, puris, or rice.
