  • 3 eggs - beaten
  • 500 g - large brinjals
  • 2 - onions
  • Oil
  • 1 tbsp - mustard oil
  • 1/4 tsp - pepper
  • Salt to taste
  • 1 bunch - coriander leaves, minced

How to Make Egg and Brinjal

  • Wash and dry the brinjals
  • Smear them with mustard oil and bake in a very hot oven at 260 degrees until soft and pulpy
  • Peel the brinjals and mash the pulp thoroughly Keep aside
  • Heat the oil and fry the onions till soft and golden brown
  • Add the brinjal pulp and cook till the mixture is well blended and deep brown
  • Add the eggs, salt and pepper
  • Cook over a low heat for 10 mins, stirring constantly
  • Add the coriander leaves, blend well and serve immediately
