Ingredients

  • 1 - medium-sized cauliflower, cut into florets
  • 1 bunch - onion leeks, cut into bits
  • 4 tbsp - grated cheddar cheese
  • 6 - eggs, beaten
  • 1 cup - fresh cream
  • 3 tsp - tomato sauce
  • salt to taste
  • 1 tsp - pepper powder
  • 1 tsp - chilli powder
  • 2 tbsp - butter

How to Make Egg And Cauliflower Casserole

  • Cut and soak the cauliflower in salt water for an hour
  • Cook the cauliflower in salted boiling water for 10 minutes, then drain.
  • Whisk the beaten eggs lightly with salt, pepper, chilli powder, 2 tbsp of grated cheese, fresh cream and tomato sauce.
  • Mix together with the cauliflower and onion leeks.
  • Transfer to a buttered oven-safe dish and sprinkle the remaining cheese on top.
  • Bake in a moderate oven (355 degrees Fahrenheit, Gas mark 4) for 25-30 minutes.
  • Serve with buttered toast and chips.
