Ingredients

  • 3 eggs
  • 1/2 cup - minced Onion
  • 1/2 cup - grated cheese
  • 8 large firm Tomatoes
  • 1 tsp - chilli powder
  • 1/2 tsp - Cumin seed powder
  • Oil
  • 1/2 cup - minced Capsicum
  • 3 Cloves garlic, minced
  • Salt to taste
  • Grated cheese for topping

How to Make Egg and cheese in tomatoes

  • Slice off tops of the tomatoes and scoop out the pulp.
  • Place tomato cases evenly on a greased baking dish.
  • Heat the oil and saute the onions and add the garlic.
  • Then add the chilli and cumin seed powders.
  • Fry for a few mins. Beat the eggs well.
  • Add the eggs to the onion mixture along with the tomato pulp, capsicum, grated cheese and salt.
  • When the mixture becomes creamy, fill the tomato cases with it and sprinkle with grated cheese.
  • Bake in a moderate oven at 190 degrees C until the cheese has melted.
  • Makes 4 servings.
