Ingredients

  • 3 eggs
  • 1/2 cup - minced Onion
  • 1/2 cup - grated cheese
  • 8 large firm Tomatoes
  • 1 tsp - chilli powder
  • 1/2 tsp - Cumin seed powder
  • Oil
  • 1/2 cup - minced Capsicum
  • 3 Cloves garlic, minced
  • Salt to taste
  • Grated cheese for topping
  • How to Make Egg and cheese in tomatoes:

    1. Slice off tops of the tomatoes and scoop out the pulp.
    2. Place tomato cases evenly on a greased baking dish.
    3. Heat the oil and saute the onions and add the garlic.
    4. Then add the chilli and cumin seed powders.
    5. Fry for a few mins. Beat the eggs well.
    6. Add the eggs to the onion mixture along with the tomato pulp, capsicum, grated cheese and salt.
    7. When the mixture becomes creamy, fill the tomato cases with it and sprinkle with grated cheese.
    8. Bake in a moderate oven at 190 degrees C until the cheese has melted.
    9. Makes 4 servings.
