Ingredients

  • 200 gm - sausages
  • 1 can - Cream style sweet Corn
  • 4 eggs - beaten
  • 1 onion, chopped
  • 2 cubes of cheese, grated
  • 1 tbsp. - parsley, chopped
  • 2 tbsp. - Butter or refined oil
  • salt and pepper to taste

How to Make Egg and corn supreme

  • Skin the sausages, if desired and cut into pieces, one centimeter long.
  • Heat the butter or oil in a frying pan. Add the sausages and onion. Cook, stirring on medium high heat until browned, for about 5 mins.
  • Stir in the tinned corn and mix well to blend, adding 1-2 tbsp. water, only if necessary.
  • Add the eggs, salt, pepper and parsley, mixing well. Cook over a gentle heat, stirring frequently until the eggs are lightly scrambled.
  • Turn into an ovenproof dish and sprinkle with the cheese.
  • Cook in a preheated grill until the cheese is golden and bubbles for about 5 mins. If you do not have a grill, just mix the cheese in the frying pan itself.
  • Serve at once with toast.
