Ingredients

  • 8 hard-boiled eggs
  • 250g - mushrooms, sliced
  • 1 tbsp - parsley, chopped
  • 1 green chilli, chopped
  • 30 gm - flour
  • 1 cup - milk
  • 1/2 tsp - pepper
  • 4 tbsp - grated cheese
  • 2 tbsp - butter
  • Salt to taste

How to Make Egg and Mushroom Bake

  • Melt 1 tbsp. of butter and add the flour.
  • Cook gently for a few mins, stirring constantly.
  • Do not brown. Remove the pan from the fire and gradually stir in half the milk.
  • Blend well and return to the fire.
  • Simmer, stirring constantly till it thickens.
  • Now gradually add the remaining milk.
  • Add the chopped parsley and chilli and stir gently.
  • Simmer for 1 min more, then remove from the fire. Keep aside.
  • Saute mushrooms in the remaining butter and add to the sauce.
  • Chop the eggs and stir into the sauce.
  • Grease a baking dish and pour the mixture into this.
  • Sprinkle top with cheese and bake in a moderate oven at 190 degrees C till the top is golden brown.
  • Makes 4 servings.
