Ingredients

  • bread slices - 8
  • hard-boiled eggs - 4
  • Tomato - 1/2 cup, chopped
  • yellow mustard - 2 tbsp, or to taste
  • salt and pepper to taste
  • low fat cheese spread - 4 tsp

How to Make Egg and Tomato Sandwiches

  • Cut the hard boiled eggs into halves and remove the yolks.
  • Grate the whites. Add one yolk to the whites.
  • Add mustard, salt and pepper and mix well. (Discard the remaining yolks )
  • Spread each slice of bread thinly with the cheese spread and sandwich two slices with the egg mixture.
  • Make four sandwiches and cut each sandwich into two parts.
