  • 4 - egg, hardboiled and shelled
  • 1 - large potato
  • 1/2 cup - tomato puree
  • 4 - green chillies, slit
  • 2 - medium sized onions
  • 2 tbsp - oil
  • 1/2 tsp - chilli powder
  • Salt to taste
  • Coriander leaves - a few strands
  • 1/4 cup - water

How to Make Egg in Potato Gravy

  • Heat oil in a pan and fry the boiled eggs a little
  • Peel the potato and slice into thin chips. Soak them in water
  • Remove the eggs and fry the onions for 3 mins. Cover and cook till the onions become soft.
  • Put the green chillies and fry for a minute.
  • Add the potato along with water, salt and chilli powder. Close the lid.
  • Stir occasionally and cook till the potatoes become soft.
  • Put the tomato puree, eggs and cook without lid till the gravy becomes thick.
  • Garnish with coriander and serve with roti or rice.
