Ingredients

  • 6 - eggs
  • 1 - medium Potato
  • 1 - medium red Onion
  • 1/2 - red Capsicum cut into thin strips
  • 1/2 - green Capsicum cut into thin strips
  • 3 - green chillies, chopped
  • 1 Clove - garlic, crushed
  • A handful - coriander leaves, chopped
  • 2 tbsp - Lime juice
  • 2 tbsp - Butter
  • 1/2 cup - grated cheese
  • 2 big - tomatoes, cut into round slices
  • Salt
  • How to Make Egg Pizza with Cheese:

    1. Boil the potato and remove skin. Cut into cubes
    2. Cut half of the onion in rings and chop the remaining half
    3. Heat a pan and melt butter; fry chopped onions till soft and add chopped chillies and crushed garlic
    4. After a minute, add potatoes and capsicum. Fry for two minutes and season with salt
    5. Finally, add the lime juice and chopped coriander.
    6. In a bowl, beat the eggs and season. Add the cooked vegetables in it. Pour this into a greased dish
    7. Place it under a hot grill for 3 minutes or until set.
    8. Take the dish out and layer the tomato rings and onion rings on top. Sprinkle the cheese on top and bake for 3-5 minutes more.
    9. Take out the dish and allow 5 minutes before you cut it into wedges
    10. Serve
