  • 2 cups - All-purpose flour
  • 1 cup - Cornmeal
  • 1 cup - Sugar
  • 3 tsp - Egg replacer powder + 4tbsp Warm water
  • 1 tsp - Baking powder
  • 1/2 tsp - Baking Soda
  • 1/2 cup - Orange Juice (fresh)
  • 1 tbsp - Orange rinds
  • 3 tbsp - Vegetable shortening
  • 1/4 cup - Cranberries
  • How to Make Eggless Cornmeal Orange N Cranberries Loaf:

    1. Preheat the oven to 350 degree F.
    2. Beat both the vegetable shortening and sugar until soft and fluffy.
    3. Gradually, add the egg replacer powder mixed with warm water, baking powder, baking soda, orange juice and orange rinds.
    4. Finally, add the all-purpose flour, cranberries and cornmeal.
    5. Beat everything well into a soft batter.
    6. Pour the batter into a greased loaf pan.
    7. Sprinkle a few cranberry pieces over the batter.
    8. Arrange the loaf pan in the middle rack and bake for 30-35 minutes or until the toothpick comes out clean.
    9. Cut the loaves and serve.
