  • 1/2 cup - Butter
  • 1.5 cup - All-purpose flour
  • 1.5 cups - Yellow cornmeal
  • 1 cup - Powdered sugar
  • 1 tbsp - Vanilla extract
  • 1/2 tsp - Baking powder

How to Make Eggless Crunchy Cornmeal Cookies

  • Pre-heat the oven to 350 degree F.
  • Line a baking sheet over a baking tray. Keep aside.
  • In a large bowl, beat together the butter and the powdered sugar until they turn creamy.
  • Meanwhile, mix the flour, baking powder and cornmeal together and keep aside.
  • Gradually add the flours and vanilla extract to the butter-sugar mixture and knead them into a soft dough.
  • Cover the dough with a lid and keep it in the fridge for an hour.
  • Make small balls from the dough and arrange them over a baking sheet leaving enough space between them.
  • Bake for 15-20 minutes until they turn golden brown.
