  • 1/2 cup - Butter
  • 1.5 cup - All-purpose flour
  • 1.5 cups - Yellow cornmeal
  • 1 cup - Powdered Sugar
  • 1 tbsp - Vanilla extract
  • 1/2 tsp - Baking powder
  • How to Make Eggless Crunchy Cornmeal Cookies:

    1. Pre-heat the oven to 350 degree F.
    2. Line a baking sheet over a baking tray. Keep aside.
    3. In a large bowl, beat together the butter and the powdered sugar until they turn creamy.
    4. Meanwhile, mix the flour, baking powder and cornmeal together and keep aside.
    5. Gradually add the flours and vanilla extract to the butter-sugar mixture and knead them into a soft dough.
    6. Cover the dough with a lid and keep it in the fridge for an hour.
    7. Make small balls from the dough and arrange them over a baking sheet leaving enough space between them.
    8. Bake for 15-20 minutes until they turn golden brown.
