Ingredients

  • 1.5 cups - All-purpose flour
  • 1/2 cup - Canola oil
  • 1/2 cup - Cornmeal
  • 1 tbsp - White vinegar
  • 1/4 cup - Hot water
  • 1/2 cup - Dates puree
  • 3/4 cup - Honey
  • 1/2 tsp - Baking powder
  • 1 tsp - Baking soda

How to Make Eggless Dates Cornmeal Muffins

  • Soak a cup of pitted dates in hot water for half an hour. Grind them as fine puree and use them as per need.
  • Meanwhile, pre-heat the oven to 350 degree F.
  • Sieve the all-purpose flour along with the baking powder and baking soda.
  • Now, add the cornmeal to the sieved flour. Keep aside.
  • Beat together the oil and honey for a few minutes. Add dates puree and white vinegar. Beat everything together until they are well mixed.
  • Finally, add the flour-cornmeal mixture and hot water. Mix everything well with a spatula.
  • Don't overmix the muffin batter. Pour the muffin batter to the silicon muffin mould and bake for 15-20 minutes until a skewer inserted comes out clean.
