  • 2 cups - All-purpose flour
  • 1 cup - Silken tofu (pureed)
  • 1 tsp - Baking powder
  • 1 cup - Sugar
  • 1/4 tsp - Salt
  • 1/4 cup - Milk
  • 3/4 cup - Butter (room temperature)
  • 1 tsp - Vanilla extract
  • 1/2 tsp - Cinnamon powder
  • 1/4 cup - Nuts (cashews, almonds and walnuts)
  • 1/4 cup - Dry fruits(raisins, cherries, apricots and dates)
  • A few almond flakes

How to Make Eggless Fruits and Nuts Cake

  • Preheat the oven to 350 degree F. Sift together the flour, baking powder, cinnamon powder and salt in a bowl. Keep aside.
  • Cream the butter and sugar together until they turn soft.
  • Add the milk, vanilla and beat it again well.
  • Add the pureed tofu to the wet ingredients. Mix it with a wooden spoon.
  • Add the dry ingredients, fruits and nuts to the wet ingredients gradually. The batter will be of semi-solid consistency.
  • Spread the batter in a prepared loaf pan. Sprinkle the almond flakes over the batter and bake for 30-35 minutes in the middle rack until a skewer inserted comes out clean.
  • Let the cake cool completely and slice it as per your need.
