Ingredients

  • flour - 2 cups
  • Milk - 300 ml
  • sodium bicarbonate - 1.5 tsp
  • dry Ginger powder - 1 tsp
  • Cinnamon powder - 1 tsp
  • candied Ginger - 2 tbsp
  • soft Jaggery - 1/2 cup
  • Sugar - 1/2 cup
  • Butter - 1/2 cup
  • chopped nuts - 2 tbsp
  • salt -1/2 tsp

How to Make

  • Mix together flour, ginger and cinnamon power and salt.
  • Stir in the candied ginger.
  • Dissolve jaggery in milk and strain.
  • Sprinkle 1 tbsp of water over sugar and place on a low flame till it is caramelized.
  • Add 4 tbsp of hot water to it and make a thick syrup.
  • Add 4 tbsp of this syrup to the milk and jaggery liquid.
  • Add butter to it and heat gently till the butter is melted.
  • Cool and add to the flour mixture.
  • Lastly, mix soda with 1 tbsp of boiling hot water and add it to the batter.
  • Pour in a greased pan and sprinkle chopped nuts on top.
  • Bake in a mode oven (160 C) till done. About 35-40 minutes.
