Ingredients

  • 1 cup - sweetened condensed Milk
  • 1/2 cup - butter, softened
  • 1/4 cup - yogurt
  • 3tbsp - Lemon juice
  • 1 tbsp - Lemon zest
  • 1.5 cups - all-purpose flour
  • 1 tsp - baking powder
  • 1/2 tsp - baking soda
  • 1/4 tsp - salt
  • For filling:
  • 1/2 cup - desiccated Coconut
  • 1/4 cup - Cream cheese
  • 3 tbsp - Sugar
  • How to Make Eggless Lemon Coconut Bread:

    1. Preheat oven to 350F and line a baking parchment sheet over a baking loaf pan.
    2. In a bowl beat together condensed milk, butter at medium speed, scraping bowl often, until creamy.
    3. Meanwhile, sieve together the flour, baking powder and baking soda and keep it aside
    4. Blend yoghurt, lemon juice and lemon zest and beat till done.
    5. Stir in the sieved flour mixture and salt until well mixed.
    6. Mix the dry and wet ingredients together.
    7. For filling: Combine cream cheese and sugar and mix well.
    8. Stir in the desiccated coconut.
    9. Spoon half of batter into prepared pan and spread the filling mixture evenly over batter.
    10. Pour remaining batter over filling and bake for 40-45 minutes.
