  • 2 cups - mixed berries, strawberries, raspberries, blueberries, blackberries
  • 1/4 cup - sugar
  • 1 tbsp - lemon juice
  • 1 tbsp - cornstarch
  • For Ice cream:
  • 2.5 cups - fresh cream, chilled
  • 1 cup - milk, chilled
  • 1/2 cup - mixed berries sauce
  • 3/4 cup - sugar

How to Make Eggless Mixed Berries Ice cream

  • Mixed Berries Sauce:
  • Cook the berries, sugar and lemon juice in medium heat.
  • Mash the berries and stir occasionally, once the berries are soft and juice oozes out, add the cornstarch and stir quickly.
  • In high flame cook for few minutes until the sauce reach the desire thickness.
  • Cool it completely and store in the refrigerator for a week.
  • For Ice cream:
  • In a bowl whisk together the milk and sugar until the sugar dissolves.
  • In a large bowl, take enough ice cubes, now place the milk mixture bowl inside, pour the fresh cream and beat it with a beater until it becomes thick.
  • Now add the mixed berries sauce to the thickened mixture and beat again for a while.
  • Transfer this smooth mixture to an air tightened box and freeze for maximum of three hours.
