Ingredients

  • 2.5 cups - All-purpose flour
  • 1/4 cup - Butter
  • 1/2 cup - Sugar
  • 1/2 cup - Creamy Peanut Butter
  • 1 cup - Fresh Orange juice
  • 1 tbsp - Orange zest
  • 1 tsp - Baking powder
  • 1/2 tsp - Baking soda
  • 1/2 cup - White chocolate chunks
  • 1/2 cup - Yogurt
  • 1/2 tsp - Vanilla extract
  • 1/4 tsp - Salt
  • For Icing:
  • 1/4 cup - White chocolate (chopped roughly)
  • 3 tbsp - Fresh Cream
  • A few Sugar pearls
  • How to Make Eggless Peanut Butter Cupcakes:

    1. Preheat the oven to 350 degrees F.
    2. Line the cupcake pan with paper moulds.
    3. Beat the butter, sugar and peanut butter together until they turn smooth.
    4. Now add the yogurt and orange juice and beat for a few minutes.
    5. Sieve the flours with salt, baking soda and baking powder and add gradually to the already prepared wet ingredients.
    6. Mix well with a spatula (don't overmix) and gently fold the white chocolate chunks and orange zest into the batter.
    7. Spoon the cupcake batter into the paper moulds and bake for 20-25 minutes or until a toothpick inserted comes out clean.
    8. For Icing:
    9. Take the chopped white chocolate and fresh cream in a microwave safe bowl and heat for 2-3 minutes. Whisk well to turn into a white ganache.
    10. Once the cupcakes get cooled, spoon the white chocolate ganache on top of the cupcakes and sprinkle the sugar pearls generously.
    11. Enjoy with your favourite drink.
