Ingredients

  • 1 cup - Ragi
  • 1 cup - Rolled oats
  • 1/2 cup - All-purpose flour
  • 1/2 cup - Persimmon puree
  • 3 tbsp - Vegetable shortening
  • 1/2 cup - Sugar
  • 1 tsp - Baking powder
  • 1/4 tsp - Baking soda
  • 1/4 cup - Packed brown sugar
  • 3 tsp - Egg replacer powder + 4 tbsp - Warm water
  • 1/4 cup - Raisins
  • 1/4 cup - Milk

How to Make Eggless Persimmon, Ragi N Oats Cookies

  • Mix the egg replacer powder and warm water into a thick paste.
  • Beat sugar, packed brown sugar and vegetable shortening until soft.
  • Add the persimmon puree, baking powder, baking soda and raisins.
  • Finally add the ragi flour, rolled oats and all-purpose flour with milk and knead into soft dough.
  • Preheat the oven to 350 degrees F and place a baking sheet over a baking tray.
  • Make small balls from the dough and flatten them with your palms. If they are sticky, just grease your palms.
  • Place these cookies over the baking sheet, leave some spaces between them and bake for 25-30 minutes.
